Ingredients:

  • 1 cup crushed pineapple, drained (reserve the juice)
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional, such as walnuts or pecans)
  • 1/2 cup coconut flakes (optional, for added texture)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan or line it with parchment paper.
  2. Prepare the Pineapple:
  • Drain the crushed pineapple well, pressing it with a paper towel to remove excess moisture.
