Ingredients

For the Cake:

  • 1 cup unsweetened cocoa powder

  • 2 large eggs
  • 1 cup buttermilk
  • 1 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water

For the Coconut-Pecan Frosting:

  • 1 cup evaporated milk
  • 1 cup granulated sugar
  • ½ cup unsalted butter
  • 3 large egg yolks
  • 1 tsp vanilla extract
  • 1 ½ cups sweetened shredded coconut
  • 1 cup chopped pecans

Instructions

1. Make the Cake:

  1. Preheat your oven to 350°F (175°C). Grease and flour a large baking sheet (about 18×13 inches).
  2. In a large bowl, whisk together cocoa powder, flour, sugar, baking powder, baking soda, and salt.
  3. Add eggs, buttermilk, vegetable oil, and vanilla. Beat on medium speed for about 2 minutes.
  4. Stir in the boiling water until well combined (the batter will be thin).
  5. Pour the batter into the prepared baking sheet and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

  1. Once the cake is completely cool, spread the coconut-pecan frosting evenly over the top.
