Decadent Raspberry Chocolate Cheesecake

Ingredients:

For the Crust:

  • 1 ½ cups chocolate cookie crumbs (like Oreos)
  • ½ cup unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz semi-sweet chocolate, melted and slightly cooled
  • ½ cup sour cream
  • ½ cup fresh raspberries (plus extra for garnish)

For the Raspberry Sauce:

  • 1 cup fresh raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice

Instructions:

  1. Prepare the Crust:
  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.
  • Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8-10 minutes, then remove and let it cool.
  1. Make the Cheesecake Filling:
  • In a large mixing bowl, beat the cream cheese and sugar together until smooth and creamy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually add the melted chocolate, mixing until fully incorporated.
  • Add the sour cream and gently fold in the fresh raspberries.
  1. Bake the Cheesecake:
  • Pour the cheesecake filling over the cooled crust and smooth the top.
  • Bake for about 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.
  1. Make the Raspberry Sauce:
  • In a small saucepan, combine the raspberries, sugar, and lemon juice. Cook over medium heat until the raspberries break down and the mixture thickens, about 5-7 minutes. Strain to remove seeds if desired.
  1. Chill and Serve:
  • After cooling in the oven, refrigerate the cheesecake for at least 4 hours, or overnight for best results.
  • Before serving, drizzle with raspberry sauce and garnish with fresh raspberries.

Tips:

  • For a smoother cheesecake, make sure all ingredients are at room temperature.
  • You can substitute the sour cream with Greek yogurt for a lighter option.
  • This cheesecake can be made a day ahead, making it perfect for entertaining.

Enjoy your Decadent Raspberry Chocolate Cheesecake!
