Spinach Stuffed Pastry

Ingredients:

  • 1 package (17.3 oz) frozen puff pastry (2 sheets), thawed
  • 1 cup fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)
  • 1 cup ricotta cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup grated Parmesan cheese
  • 1 egg, beaten (for egg wash)
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg (optional)
  • Salt and pepper, to taste
  • Olive oil (for sautéing)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C).
  2. Prepare the Filling:
  • In a skillet, heat a drizzle of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  • Add the spinach and cook until wilted (if using fresh) or heated through (if using frozen). Remove from heat and let it cool slightly.
  • In a bowl, combine the cooked spinach, ricotta cheese, feta cheese, Parmesan cheese, nutmeg (if using), salt, and pepper. Mix well until combined.

  • Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into squares (about 4×4 inches).
  • Place a spoonful of the spinach filling in the center of each square.
