Cheesy Asparagus Casserole

Ingredients:

  • 1 pound fresh asparagus, trimmed and cut into 2-inch pieces
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheddar cheese (plus extra for topping)
  • 1 cup cream of mushroom soup (or homemade)
  • 1/2 cup milk
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz) for topping
  • 2 tablespoons melted butter (optional)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Asparagus: Blanch the asparagus in boiling water for about 3 minutes, then transfer to an ice bath to stop the cooking. Drain and set aside.

  4. Transfer to Casserole Dish: Pour the mixture into a greased 9×13-inch casserole dish, spreading it out evenly.
  5. Add Topping: In a separate bowl, mix the crushed crackers with the melted butter (if using). Sprinkle this mixture evenly over the top of the casserole, then add additional shredded cheddar cheese if desired.
  6. Bake: Bake in the preheated oven for 25-30 minutes, or until bubbly and golden brown on top.
  7. Serve: Let it cool for a few minutes before serving. Enjoy your cheesy asparagus casserole!
