Ingredients:

  • For the Chicken:
  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • For the Creamed Spinach, Bacon, and Mushrooms:
  • 4 slices bacon, chopped
  • 1 cup mushrooms, sliced
  • 3 cups fresh spinach (or 1 cup frozen, thawed and drained)
  • 1 cup heavy cream
  • 1/2 cup cream cheese, softened
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup grated Parmesan cheese (optional)

Instructions:

  1. Prepare the Chicken:
  • Season the chicken breasts with salt, pepper, and garlic powder.
  • In a large skillet, heat the olive oil and butter over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove from the skillet and set aside.
  1. Cook the Bacon and Vegetables:
  • In the same skillet, add the chopped bacon and cook until crispy. Remove and drain on paper towels.
  • In the bacon drippings, add the sliced mushrooms and cook until browned, about 5 minutes.
  • Add the fresh spinach and cook until wilted (if using frozen spinach, make sure it’s well-drained).
