Baked Reuben Sandwiches

Ingredients:

  • 8 slices of rye bread
  • 1 lb (450 g) corned beef, thinly sliced
  • 1 cup sauerkraut, drained and squeezed dry
  • 8 slices Swiss cheese (or more if you like it extra cheesy)
  • ¼ cup Thousand Island dressing (or Russian dressing)
  • 4 tbsp unsalted butter, softened

Instructions:

  1. Preheat the Oven:
  2. Preheat your oven to 375°F (190°C).
  3. Prepare the Bread:
  4. Spread a thin layer of softened butter on one side of each slice of rye bread. This will help create a crispy, golden crust.
  5. Assemble the Sandwiches:
  6. Lay out 4 slices of bread, buttered side down, on a baking sheet.
  7. Spread a generous layer of Thousand Island dressing on each slice.
  8. Layer the sliced corned beef evenly on top of the dressing.
  9. Add a layer of drained sauerkraut on top of the corned beef.
  10. Place a slice of Swiss cheese over the sauerkraut.
  11. Top with the remaining 4 slices of bread, buttered side up.
  12. Bake the Sandwiches:
  13. Place the baking sheet in the preheated oven.
  14. Bake for about 10 minutes, or until the bread is golden brown and the cheese is melted.
  15. Flip the sandwiches carefully and bake for an additional 5-7 minutes, or until the second side is also golden brown and crispy.
  16. Serve:
  17. Remove from the oven and let the sandwiches cool for a minute or two.
  18. Slice in half and serve warm.

Optional:

  • If you prefer a more “grilled” texture, you can use a panini press or grill the sandwiches in a skillet, pressing them down with a heavy pan or press, until they are golden and the cheese is melted.
