Banana Pudding from Scratch

Ingredients:

For the Pudding:

  • 2/3 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups whole milk
  • 3 large egg yolks (beaten)
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

For Assembly:

  • 4-5 ripe bananas, sliced
  • 1 package (12 oz) vanilla wafers
  • Whipped cream (optional, for topping)

Instructions:

  1. Make the Pudding:
  • In a medium saucepan, whisk together the sugar, flour, and salt.
  • Gradually whisk in the milk until smooth. Cook over medium heat, stirring constantly until the mixture begins to thicken and bubble (about 10 minutes).
  • In a separate bowl, lightly beat the egg yolks. Once the pudding is thickened, slowly add about 1 cup of the hot pudding to the egg yolks while whisking constantly. This tempers the eggs.
  • Pour the egg mixture back into the saucepan and cook for an additional 2-3 minutes, stirring constantly until thickened.
  • Remove from heat and stir in the butter and vanilla extract until smooth.
  1. Assemble the Pudding:
  • In a 2-quart dish or individual serving cups, layer the vanilla wafers, sliced bananas, and pudding. Start with a layer of wafers, followed by a layer of bananas, and then pour in the pudding. Repeat until all ingredients are used, finishing with a layer of pudding on top.
  1. Chill:
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld and the pudding to set.
  1. Serve:
  • Before serving, you can top with whipped cream, if desired. Enjoy your homemade banana pudding!

Tips:

  • For added flavor, you can use a dash of banana extract in the pudding.
  • You can also add a sprinkle of crushed vanilla wafers on top for a bit of crunch.

Enjoy your delicious banana pudding from scratch!
