Ingredients:

For the Stir Fry:

  • 1 lb (450 g) chicken breast or thighs, thinly sliced
  • 4 cups broccoli florets (about 1 large head of broccoli)
  • 1 red bell pepper, thinly sliced
  • 1 medium carrot, thinly sliced
  • 2-3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced or grated
  • 2-3 green onions, sliced
  • 2 tbsp vegetable oil (or another cooking oil of your choice)
  • 2 tbsp soy sauce (low sodium is a good option)
  • 2 tbsp oyster sauce (optional for added depth of flavor)
  • 1 tbsp hoisin sauce (optional for a touch of sweetness)
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening sauce, optional)

For Serving:

  • Cooked rice or noodles (white, brown, or your choice)

Instructions:

  1. Prepare the Ingredients:
  2. Wash and cut the broccoli into bite-sized florets.
  3. Slice the chicken into thin strips.
  4. Slice the bell pepper and carrot thinly.
  5. Mince the garlic and ginger.
  6. Slice the green onions for garnish.
  7. Cook the Chicken:
  8. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  9. Add the chicken slices and cook, stirring occasionally, until they are no longer pink and are cooked through (about 5-7 minutes). Remove the chicken from the skillet and set it aside.
  10. Stir-Fry the Vegetables:
  11. In the same skillet, add the remaining 1 tablespoon of vegetable oil.
  12. Add the minced garlic and ginger, cooking for about 30 seconds until fragrant.
  13. Add the broccoli florets, bell pepper, and carrot. Stir-fry for about 4-5 minutes until the vegetables are tender-crisp.
  14. Combine and Sauce:
  15. Return the cooked chicken to the skillet with the vegetables.
  16. Add the soy sauce, oyster sauce (if using), and hoisin sauce (if using). Stir well to coat everything evenly.
  17. If using, stir in the cornstarch-water mixture to thicken the sauce. Cook for an additional 1-2 minutes until the sauce has thickened to your liking.
  18. Serve:
  19. Serve the stir fry over cooked rice or noodles.
  20. Garnish with sliced green onions if desired.
