Cheesy Parmesan Mozzarella Bites

Ingredients:

  • 8 oz fresh mozzarella cheese, cut into bite-sized cubes
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup breadcrumbs (panko works well for extra crunch)
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Oil for frying (vegetable or olive oil)

Instructions:

  1. Prepare the Breading Station:
  • Set up three bowls: one with flour, one with beaten eggs, and one with breadcrumbs mixed with garlic powder, Italian seasoning, salt, and pepper.
  1. Coat the Mozzarella:
  • Dip each mozzarella cube into the flour, coating it lightly. Shake off any excess.
  • Next, dip it into the beaten eggs, allowing any excess to drip off.
  • Finally, roll it in the breadcrumb mixture until well coated. Repeat with all mozzarella cubes.
  1. Chill:
  • Place the coated mozzarella bites on a baking sheet and refrigerate for about 30 minutes. This helps them hold their shape while frying.
  1. Heat the Oil:
  • In a large skillet, heat about 1/2 inch of oil over medium heat. You can test the oil by dropping a small piece of bread in; if it sizzles, it’s ready.
  1. Fry the Bites:
  • Carefully add the mozzarella bites to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 1-2 minutes on each side, or until golden brown.
  • Use a slotted spoon to transfer the bites to a paper towel-lined plate to drain any excess oil.
