Fritters with vegetable cheese

Ingredients

  • 1 cup vegetable cheese (or cheese spread)
  • 1 cup all-purpose flour
  • 1/2 cup milk
  • 2 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup grated vegetables (like zucchini, carrots, or spinach)
  • 1 tablespoon fresh herbs (like parsley or chives, optional)
  • Oil for frying

Instructions

  1. Prepare the Batter: In a mixing bowl, combine the flour, baking powder, salt, and pepper. In another bowl, whisk together the milk and eggs. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  2. Add Cheese and Vegetables: Fold in the vegetable cheese, grated vegetables, and herbs (if using) until well combined.
  3. Heat the Oil: In a deep skillet or frying pan, heat about 1-2 inches of oil over medium-high heat until hot (about 350°F or 180°C).
  4. Fry the Fritters: Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until golden brown.
  5. Drain and Serve: Remove the fritters with a slotted spoon and drain on paper towels to remove excess oil.
