Garlic Shrimp Pasta

Ingredients:

  • 8 oz spaghetti or linguine
  • 1 lb large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup white wine (optional)
  • 1/4 tsp red pepper flakes (adjust to taste)
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced and zested
  • Grated Parmesan cheese (for serving)

Instructions:

  1. Cook the Pasta:
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water, then drain the pasta.
  1. Sauté the Shrimp:
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 30 seconds).
  • Add the shrimp to the skillet, seasoning with salt and pepper. Cook until the shrimp turn pink and opaque, about 2-3 minutes per side.
  1. Add Wine and Combine:
  • If using, pour in the white wine and let it simmer for 1-2 minutes to reduce slightly.
  • Add the cooked pasta to the skillet, tossing to combine. If the pasta seems dry, add some reserved pasta water to reach your desired consistency.
  1. Finish the Dish:
  • Stir in the lemon juice, zest, and fresh parsley. Adjust seasoning with salt and pepper if needed.
  1. Serve:
  • Divide the pasta among plates and sprinkle with grated Parmesan cheese. Enjoy!
