Ingredients

  • 1 (30 oz) bag frozen hashbrowns (or about 6 cups fresh grated potatoes)
  • 1 lb breakfast sausage (pork or turkey)
  • 1 cup chopped onion
  • 1 cup chopped bell pepper (optional)
  • 2 cups shredded cheddar cheese (plus extra for topping)
  • 6 large eggs
  • 1 cup milk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Optional: chopped green onions for garnish

Instructions

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C).
  2. Cook Sausage:
    In a skillet over medium heat, cook the sausage until browned and fully cooked. Add the chopped onion and bell pepper, and cook until softened. Drain any excess grease.
  3. Combine Ingredients:
    In a large bowl, mix together the hashbrowns, cooked sausage mixture, and 2 cups of shredded cheddar cheese.
  4. Prepare Egg Mixture:
    In another bowl, whisk together the eggs, milk, garlic powder, onion powder, salt, and pepper.
  5. Assemble Casserole:
    Spread the hashbrown mixture evenly in a greased 9×13 inch baking dish. Pour the egg mixture over the top, ensuring it’s evenly distributed. Sprinkle additional cheese on top if desired.
  6. Bake:
    Bake for 45-55 minutes, or until the casserole is set and lightly golden on top. You can check doneness by inserting a knife in the center; it should come out clean.
  7. Serve:
