Ingredients

  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (28 oz) diced tomatoes (with juice)
  • 4 cups beef or chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 bay leaf

Instructions

  1. Brown the Meat: In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess fat and transfer to the crockpot.
  2. Add Vegetables: To the crockpot, add the onion, garlic, carrots, celery, bell pepper, kidney beans, black beans, corn, diced tomatoes, and broth.
  3. Season: Stir in the chili powder, cumin, smoked paprika, salt, pepper, and bay leaf. Mix well to combine all ingredients.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours.
