Skillet Chicken and Mushrooms

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 8 oz mushrooms, sliced (any variety, such as cremini or button)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme)
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half for a lighter option)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Season the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Heat Oil: In a large skillet, heat the olive oil over medium-high heat.
  3. Cook Chicken: Add the chicken breasts to the skillet and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove the chicken from the skillet and set aside.
  4. Sauté Mushrooms: In the same skillet, add the sliced mushrooms and cook for about 5 minutes until they are browned and tender. Add the minced garlic and thyme, and sauté for another minute until fragrant.
  5. Make the Sauce: Pour in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for about 2 minutes. Stir in the heavy cream and simmer for another 2-3 minutes until the sauce thickens slightly.
  6. Combine: Return the cooked chicken to the skillet, spooning the mushroom sauce over the top. Cook for an additional 2 minutes to heat through.
  7. Serve: Garnish with chopped parsley and serve hot, either on its own or with rice, pasta, or a side of vegetables.
