Ingredients:

For the Slaw:

  • 1 small head of green cabbage, finely shredded (about 6 cups)
  • 1 small head of red cabbage, finely shredded (about 4 cups)
  • 1 large carrot, peeled and grated
  • 1 cup fresh cilantro, chopped
  • 1 cup corn kernels (fresh, frozen, or canned and drained)
  • 1 red bell pepper, finely diced
  • 1 small red onion, finely diced
  • 1 jalapeño, finely diced (optional, for extra heat)

For the Dressing:

  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tbsp lime juice (about 1 lime)
  • 1 tbsp honey or agave syrup
  • 1 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • Salt and black pepper to taste

Instructions:
